A pinch of sea salt

4 chicories

A pinch of ground black pepper

6 dried morels

¾ cup (20 cl) water

1 shallot

A small bunch of curly parsley

Preparation:

Briefly rinse the morels in cold water in order to remove sand and other impurities. Soak the morels in cold water for 20 minutes.

Finely mince the chicory. Heat 1 tsp of olive oil in a frying pan and fry the chicory for around ten minutes on all sides until golden brown. Season with salt and pepper. Reserve.

In the meantime, coarsely chop the shallot and fry them in a skillet with1 tsp of olive oil. Add the morels and the glass of water. Fry for five minutes under reduced heat.
