Methods:

1. Preheat the oven to 350 degrees.

2. In a blender, add in the soaked dates, dash of sea salt and two tablespoons of water. Blend until smooth in consistency.

3. In a food processor, add in the cashew butter, ground vanilla beans and baking powder. Pulse until smooth in consistency.

4. In a large bowl, add in the cashew butter mixture, dates mixture and dark chocolate chips. Stir well until just mixed.

5. Drop the cookie batter onto a large baking sheet by the spoonful.

6. Place into the oven to bake for 10 to 12 minutes.

7. Remove and transfer to a wire rack to cool completely before serving.
