Uncle John’s Scrumptious Fried Rabbit

(Otherwise known as remains and rice)

Take 1 freshly run-over rabbit.

Shake off all the fleas.

Skin it. Gut it.

Wash it.

Prepare for cooking as if it were a chicken (cut into sections).

Salt and pepper it good.

Marinate it in buttermilk for an hour or two.

Flour it.

Fry it until brown on both sides.

Once it’s brown, put it back in pan, add about a ½ cup of water.

Cover and simmer for about an hour to make it tender.

For a great meal, serve with rice, gravy and biscuits.
