Ingredients:

Stage 1

2 tablespoons of Shaoxing wine

1 scallion, cut into 2 inches

2 teaspoons of salt

2 quarts of water

2 pounds of honeycomb beef tripe, thoroughly rinsed

Stage 2

1 chopped scallion

1 tablespoon of cornstarch mixed into a slurry with 1 tablespoon of water
