Chicken Curry Peas with Couscous
Try out on this diabetic friendly chicken curry with a blend of different colors from a variety of nutritious vegetables for lunch, which is not only easy to make but also packed with flavor. You can fix it within 30
minutes as long as you pre-cook your chicken.
Preparation time: 30 min Number of servings 6
Ingredients:
1 large chopped onion
2 teaspoon of curry powder
1 cup of frozen peas
1 seeded and chopped red capsicum
12 ounces of cooked chicken breast cut into bite-size pieces
1 1/3 cups of water
2/3 cups of whole wheat couscous
½ a cup of mayonnaise
3 tablespoons of mango chutney
Preparation method:
Lightly spray the skillet with cooking spray and heat it over medium heat
Add the onions and cook until tender stir in the curry, add the water, couscous and bring to boil Stir in the chicken, capsicum, mayonnaise, chutney, peas and bring to boil
Remove from heat, allow the curry to stand for about five minutes Serve and enjoy
