PREHEAT the oven to 170°C (325°F).

MAKE the spice paste by putting all of the ingredients into a food processor and blitzing until smooth.

COMBINE the beef with the spice mixture in a large bowl and set aside.

HEAT the peanut oil in a large heavy-based flameproof casserole dish and lightly fry the shallots.

ADD the beef mixture and fry until lightly browned. You may need to do this in two batches, depending on the size of the dish.

ADD the coconut milk, kaffir lime leaves, cinnamon and star anise.

COVER with the lid and transfer to the oven to bake for 1½ hours, or until the beef is tender.

REMOVE from the oven and season with kecap manis, sugar, if needed, and salt to taste.

SERVE on rice, with the coconut and cucumber salsa (see recipe below), if desired.

COCONUT & CUCUMBER SALSA

35 g (1¼ oz/½ cup) shredded coconut

½ telegraph (long) cucumber

¼ red onion

3 tablespoons lime juice

½ teaspoon sugar

pinch salt
