Instructions:

1. Wash the spinach and then wash and chop the leek.

2. In a large pan, fry the leek in olive oil and, when tender, add the spinach as well.

3. Cook for a few minutes until the spinach is ready and then chop everything using a sharp knife.

4. In a bowl, beat the eggs with the ricotta cheese, salt and pepper to taste and grated Parmesan.

5. Add the spinach mixture, grated cheddar cheese and mix well.

6. Coat a casserole dish with butter and breadcrumbs and transfer the frittata in it.

7. Bake at 350°F for 35–40 minutes, until done.
