Make 4 wells in the hash mixture and crack an egg into each. Cover and let the eggs cook until the white is fully cooked and the yolk is to your liking. Divide into 4 storage containers.

Storage: Store in the refrigerator for up to 5 days. To reheat, vent the lid, and microwave on medium for 90 seconds.

Variations: You can use lean ground chicken or turkey instead of beef.

Vegetarian option: Go meatless by swapping in 1 pound of chopped mushrooms for the beef.
