Directions:
In a pan, heat oil over medium heat and stir-fry garlic and onion until golden brown.
Add the green beans and carrots and stir-fry for 2 minutes.
Add rice, pineapple, salt and ketchup mixing well and stir-frying for 3 minutes.
Garnish with cilantro and green onion before serving.
Serve with soy sauce, if desired.
Spanakorizo Risotto

1 1/2 lbs. spinach, cleaned, stemmed, torn
1 cup chopped spring onion
1/2 cup olive oil
1 small onion, chopped
rice, 1 1/4 cups, short-grain
1 leek, chopped
lemon juice, 1/4 cup
3 cups water
2 tablespoons minced fresh dill
salt
fresh ground black pepper
1 tablespoon tomato paste (optional)
