Soak cashews overnight until soft. Microwave sweet potato until is it thoroughly cooked and remove the skin. Set aside in a bowl. Cook elbow pasta and set aside. Make cashew sauce by mixing cashews, sweet potato, and all spices into a blender. Pour the cashew cheese mixture into a sauce pan and heat slowly. Toss the elbow macaroni in gradually and mix together.

Tips*- To make this a quick and easy dish just use pre-made vegan cheese and melt it in a bowl in the microwave. Then pour it on to the pasta.
