Lightly grease a mould or round cake tin and set aside.

Beat the egg whites until just beginning to stiffen, then beat in the caster sugar, a little at a time, until the whites are peaking.

In a separate bowl, whisk the lemon juice and zest with the cream until peaking. Fold in the chopped mint.

Lightly beat the egg yolks and fold into the egg-white mixture. Then fold in the cream mixture.

Spoon into the greased mould or tin, cover with clingfilm and freeze for at least 4 hours before serving.
