Dairy foods cause most chronic pain.
4. Gluten Intolerance and Pain
Gluten is the main protein found in wheat. It is also found in barley and rye and semolina in pasta.
Gluten is an allergen that causes inflammatory problems in some people who are sensitive to it.
More people are allergic to dairy foods. Dairy food sensitivity (allergy to casein) makes sense because cow’s milk is the perfect nutrient for baby cows, not humans.
But the logic of gluten intolerance is not apparent at first.
Many people have various inflammatory reactions to dairy foods. The same inflammatory reactions, in fact any inflammatory reaction, can be caused by gluten when an individual has inherited, or developed the trait of gluten intolerance.
Known also as celiac disease, gluten intolerance has been around for thousands of years. But it still seems to defy logic that people can react poorly to wheat, the staff of life.
Al Gore mentions a possible explanation is his 1986 book, Earth in the Balance. The original seeds of the various plant foods of the world, the plants that support human life on our planet, originated in specific “centers of diversity.” The night-shade vegetables, which include tomatoes and potatoes and peppers, originated in the new world in Central and South America.
Those foods did not make their way to Europe until the 1500’s when Spanish explorers discovered the people of North, Central, and South America. Aztecs, Mayas, and Incans were building complex, advanced, and technical societies while Europe muddled through the Dark Ages.
After nightshade vegetables made their way into the diets of Europeans, potatoes in the north, tomatoes in the south, the Renaissance movement began. Some people, like Anemarie Colbin have written about that phenomenon and suspect that the alkaloids in night shade vegetables, which stimulate abstract thought, could have been responsible.
The original wheat plants and seeds originated in Mesopotamia (the Middle East). The wild strains of wheat that originated there do not resemble the domesticated wheat that has changed genetically over time through natural selection and breeding by farmers who were seeking the hardiest, most productive plants.
While the genetics of the wheat plants changed over time, the genetics of humans changed much more slowly, and some people could not adapt to the new strains of wheat. They had digestive problems, and now we are learning, neurological and musculoskeletal symptoms and skin reactions.
You may have noticed that gluten intolerance is mentioned more often now in health and even medical literature. Many grocery stores now stock gluten free products, and some even have gluten free aisles and sections. All health food stores carry gluten free products.
Gluten intolerance is four times more prevalent now than it was in the 1950’s. This is due to an increased awareness by a better educated public, but also due to more radical changes in wheat itself.
