haddock chowder

Serves 4–6

1 tablespoon butter

1/2 cup diced onion

1/2 cup diced celery

1/2 cup unpeeled, diced new potato

1 pound raw haddock fillets, cubed

1 cup fish stock

2 cups milk

2 tablespoons all-purpose flour

1 teaspoon dried summer savoury

1/2 teaspoon salt

1/4 teaspoon pepper

Melt butter in a large, heavy-bottomed pot over medium heat. Add onion, celery, and potato, and cook, stirring occasionally, until vegetables are softened. Add haddock and cook until fish is opaque. Add fish stock and bring to a simmer. Stir in milk and flour and cook 2–3 minutes, or until chowder thickens. Season with savoury, salt, and pepper, and serve.
