Apricot Bulgur Pilaf
1½ cups bulgur
½ cup onion, chopped
½ cups dried apricots, chopped
2 tsp dried mint
2 tsp dried dill
3 tbsp dried parsley
2 tbsp olive oil
2 tbsp lemon juice
⅔ cup tomatoes, chopped
½ cup feta cheese
2¼ cups boiling water
In the Kitchen
Store the bulgur in a plastic bag.
In a bowl, combine the onions, apricots, mint, dill, parsley, oil and lemon juice and mix well. Store in a separate plastic bag.
Store the tomatoes and feta cheese together in a plastic bag.
