Millet and Sweet Corn

2 cups millet

2 cups fresh sweet corn, removed from the cob

6 cups of water

pinch of sea salt per cup of grain

powdered green nori flakes

Wash millet and dry-roast in a stainless-steel skillet until it is golden brown and releases a nutty fragrance. Place millet in a saucepan. Mix in sweet corn. Add water and sea salt. Cover and bring to a boil. Reduce the flame and simmer 30–35 minutes. Remove millet and corn mixture and place in a wooden bowl. Garnish with a pinch of powdered green nori flakes.
