Baked Linefish

Serves 2–4, depending on the size of the fish

1 whole linefish, gutted and scaled

1 bunch parsley

1 bunch dill

1 small fennel bulb, thinly sliced

1 lemon, cut into slices

a little olive oil

30 ml dry white wine

salt and freshly ground black pepper

1Rinse the fish and pat dry with paper towel. Oil a large piece of foil and place half the herbs in the centre. Lay the fish on top and place the lemon slices and remaining herbs inside the fish. Drizzle with the olive oil and wine, and season with salt and pepper.

2Seal the foil around the fish to form a parcel. Place the parcel on the braai over glowing coals and cook for 25–30 minutes or until the fish comes away from the bones easily.
