This spicy-sweet chutney should be served at room temperature and goes well with any Indian bread or curry. A versatile condiment, it is also a nice addition to chicken or pork sandwiches and pairs well with sharp or bleu cheese and crackers for delicious hors d’oeuvres.

Makes about 3 cups

1½ teaspoons vegetable oil

1 teaspoon cumin seed

½ -inch piece fresh ginger, finely sliced

2 dried red chilies

2 cups pitted dates, coarsely chopped

½ cup raisins

Sea salt or kosher salt

4 tablespoons packed brown sugar

1 tablespoon cider vinegar
