Heat oil in skillet over medium-high heat. Add chicken and cook until no longer pink, about 2 to 3 minutes. Add broccoli, broth, soup, pepper, garlic, and pasta. Bring to a boil. Reduce heat to lowest setting, cover, and simmer for 15 to 20 minutes, stirring occasionally, until pasta is tender. If pasta looks dry, add a small amount of water. Melt shredded cheese over the top before serving.

1 tablespoon canola oil, divided

2 cups mushrooms, sliced

1 cup onion, chopped

1 cup broccoli, chopped

1 tablespoon fresh ginger, peeled and grated

2 garlic cloves, minced

1 cup yellow or red bell pepper, chopped
