Farro Salad with Sherry Vinaigrette
This salad recipe that comes from Asia might be ideal for vegetarians, or as a side for your main course.
Serves: 4-6
Ingredients:
8 ounces farro
3 Japanese (baby) eggplants, halved
1 small red onion, peeled, halved, and thickly sliced
Olive oil, for brushing
Salt and freshly ground black pepper
¾ cup cherry tomatoes, washed and halved
4 tablespoons chopped fresh dill, plus more for garnish
