You would think that with all the pizza and wine Greg and Rick consume, and all the splashes that happened while experimenting, that these Edison’s of barbequed pizzas had the idea for a wine sauce themselves. Nope. The thought never even crossed their minds.
Rick saw a pizza with wine sauce on a cooking show. Of course, macho cooks do not watch cooking shows, he claims to have just been flipping channels. Be that as it may, the cooking show finally shed some light on the relationship between pizza and wine. Rick did not record the cooking show. He did not write the recipe down. He thinks he remembers what wine was used, but very little else.
The lack of a recipe or even a vague idea of what they were attempting did not slow the experimenters down. These are macho cooks, they don’t need no stinking directions!
They poured a bottle of wine into a sauce pan with whatever spices were nearby and cooked it down to a paste. They did not use the same wine Rick had seen on the show. They guessed at the amount of spicing, how much heat to use and how long to cook it.
This took a few hours and three bottles of wine. (Two were poured into the cooks.) They sampled the sauce frequently and debated the spicing and cooking procedures incessantly. Their bickering drove Marianne and me out of the kitchen. When they had just enough sauce left in the pan for one pizza, they finally stopped cooking.
They sautéed some mushrooms and onions with some chopped up leftover carne asada and put it on the dough. Without sauce or cheese. After this pizza was cooked they drizzled the wine reduction sauce over the pizza.
It did not look much like a pizza. However it was delicious and has since been made with many variations, including adding blue cheese or mozzarella. The sauce usually works best drizzled after cooking because otherwise it makes the crust too soggy.
