BOTTLED MOJITO

Do this a few days in advance of a barbecue and you can have the best mojito you’ve ever drunk in your life by simply unscrewing a lid: it’s a fresh, extra-minty version of the Cuban classic. It’s very quick to prepare, and you can do it in bulk – once made it will last a solid month, so if you have any left over (you probably won’t) you can save it for the following weekend or the one after that.

To bottle

– 150g/6oz caster (superfine) sugar

– 40g/1½oz fresh mint, including stalks

– 1 litre/40oz water

– 150ml/6oz light rum

– 3g/¾ tsp dried brewer’s yeast

– 10g/½oz citric acid powder (see Eko Mail introduction)

– Bowl, at least 1.5 litre/60oz

– Funnel

– Coffee filter

– Jug, at least 1 litre/40oz

– 6 plastic bottles, about 200ml/8oz each, with caps
