Spiced Chicken Puffs

I love making Indian food almost as much as I love baking — and this recipe is an excellent way to combine the two. I first tasted these in an Indian restaurant in London, and although mine are probably not very authentic, they make a wonderful snack or side dish with a curry meal. They are particularly good served with a raita, made by combining thick, creamy yoghurt with grated cucumber, a little crushed garlic, salt and ground cumin.

310 ml (175 g) cake flour

10 ml baking powder

5 ml salt

5 ml garam masala

2 eggs

125 ml plain yoghurt

250 g shredded, cooked chicken (no skin)

5 ml minced garlic

half a small onion, finely chopped

5 ml minced chilli (optional)

30 ml chopped fresh coriander

sunflower oil for frying
