Another interesting fact about bacon is that the fat causes it to cook differently than other meats. Bacon meat is primarily fat, and fat does not cook well when it’s cool or cold. If you want evenly cooked bacon that all turns out about the same, you should let your bacon reach room temperature before cooking it.

That means if you want to cook bacon, take it out of the fridge about 15 minutes before it’s time to put it in the oven. You can actually remove it from the fridge when you start pre-heating the oven, and by the time the oven is heated it will most likely be warm enough to cook properly.
