Asian Beef Salad Single Serving
INGREDIENTS
2 large Scallions or Spring Onion
1 clove Garlic
1 tbsp Tamari Soybean Sauce
2/4 tbsp Sodium and Sugar Free Rice Vinegar
2/4 tsp Sesame Oil
2/8 teaspoon Sucralose Based Sweetener (Sugar Substitute)
2/8 tsp Curry Powder
2/16 tsp Ginger
2/2 tbsp Canola Vegetable Oil
5 1/4 oz Beef Top Sirloin (Trimmed to 1/8" Fat, Choice Grade)
4/4 cup Spring Mix Salad
2/4 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Sweet Red Peppers
2/8 cup slice Waterchestnuts (water chestnuts)
DIRECTIONS
Note: since only half of the marinade is used in this salad recipe and the rest is used as a marinade and discarded, fold the first six ingredients. (The nutritional ingredients shown are correct). For an extra flavor, use dark sesame oil (toasted) instead of normal sesame oil.
1. Combine chopped green onions, minced garlic, soy sauce, rice wine vinegar, sesame oil and sugar substitute in a small bowl. Pour half into a plastic bag with zipper; Add the steak and marinate overnight in the fridge.
2. For the remaining soy sauce mixture, add curry powder and ginger. Heat the rapeseed oil in a large pan over high heat until very hot.
3. Drain the meat and discard the marinade; Quickly fry the meat for 2 or 3 minutes in boiling oil over medium heat. Transfer to a larger mixing dish. Add salads, diced pepper, chestnuts and reserved soy sauce. Stir to cover and serve immediately.
