PESTO

2 large cloves garlic

3½ cups fresh basil leaves, packed

½ cup olive oil, separated into two ¼ cups

½ cup pecans

¼ cup water

Salt to taste

¾ cup grated Parmesan cheese

Using a food processor, mince garlic, then add basil, ¼ cup olive oil, pecans, water, and salt. Puree until smooth, taking care to scrape down sides to ensure smooth mixture. Pour into bowl, then stir in cheese and remaining olive oil. Serve with turkey cutlets or other dish.

Note: Keeps well in covered container in refrigerator.

Approximately 8 servings; use to your own taste
