1. Preheat the oven to 350°F. Lightly coat an 8-inch square baking dish with canola oil.
2. In a medium bowl, add the oats, sorghum flour, potato starch, tapioca starch, brown sugar, and ¼ teaspoon of the salt, and mix well with a fork. Add the margarine and use your fingers or a fork to combine it with the flour mixture, forming coarse crumbs. Set aside.
3. In a large bowl, add the apple slices, sugar, cornstarch, cinnamon, ginger, the remaining ¼ teaspoon salt, the lemon juice, and raisins, if using. Toss well to combine.
4. Pour the apple mixture into the baking pan in an even layer. Top evenly with the oat mixture.
5. Bake for 40 minutes, or until the apples have softened and the oat mixture is lightly browned. Serve hot, cold, or at room temperature.
