DIRECTIONS

Heat 2 tbs oil.

Sauté the onion, celery and carrot for 5 minutes.

Add the zucchini, bay leaves and thyme and cook for another 2 minutes.

Stir in the tomatoes and vegetable broth.

Bring to a boil, then simmer for 10 minutes.

Add the spinach and parsley last.

Stir in and allow to sit for a minute or two.

- 1 lb mussels

- 1 lb bay scallops

- 2 tbs oil

- 1 tsp pepper

- 6 tbs parsley

- 2 bay leaves

- 5 garlic cloves

- 1 onion

- 1 celery stalk

- 3 cups tomatoes

- 1 15-ounces tomato sauce

- 3 cups vegetable broth

- 3 tbs shallots

- 1 ½ tsp saffron

- 2 tsp paprika

- 2 tsp salt
