Directions

1. Grate cheese in small mixing bowl and set aside.

2. Combine butter and olive oil in a medium-sized frying pan over medium heat.

3. Add diced onions and sauté for 2-3 minutes, then add chopped peppers, mushrooms (and hot peppers if using) to the pan. Cook for 2-3 minutes more, stirring occasionally until vegetables are slightly tender.

4. Combine eggs and milk and whisk.

5. Add vegetables to egg mixture, sprinkle with salt and pepper and stir.

6. Add a few splashes of olive oil to frying pan at medium heat. When heated, add omelette mixture. Cook for 4-5 minutes and lift the edges of the omelette with a spatula while cooking and let the mixture spill over in the pan. When the bottom is nicely browned, flip the entire omelette over and cook the other side for a few minutes more until it is equally browned.

7. When the flip side is about half cooked, sprinkle the cheese over the omelette and cover the pan with a lid to melt the cheese a little.

8. Remove from pan, cut into quarters, top with salsa (if using) and serve.
