PUMPKIN STEW

Precious Ramotswe’s most endearing features include her down-to-earth love of pumpkin and her pragmatism. When she has a complicated problem to solve, then cooking a pot of pumpkin reassures her of the essential simplicity of life and gives her ‘a reason for going on’.

Serves 2

Ingredients

500 g pumpkin

2 cloves garlic

1 small chilli pepper

1 small onion

2 tbsp cooking oil

½ tsp salt

1 tsp brown sugar

1 tsp ground cumin

1 tsp ground coriander

40 g roasted, unsalted peanuts, crushed

190 g rice

Preparation

1. Peel and cube the pumpkin.

2. Mince the garlic and chilli, and slice the onion.

3. In a large pot, heat the oil and fry the onion and chilli until the onion turns golden, then add the garlic and continue to cook for a few more minutes.

4. Add the pumpkin, salt and sugar, cook and stir, checking the pumpkin doesn’t stick to the pan, until it becomes tender enough to mash. Use a wooden spoon to mash it in the pot – you can leave it slightly chunky if you like – and mix in the cumin and coriander.

5. Serve in a bowl with rice, sprinkling peanuts on top, and a mug of bush tea.
