For the lime drizzle icing:

100g icing sugar

Juice & finely grated zest of 2 limes

Preheat the oven to 180°C/Gas 4. Line a 12-hole muffin tin with paper cases.

Grate the courgettes and leave them for 30 minutes in a sieve suspended over a bowl to drain away their excess moisture. Weigh them down to help squeeze the water out; a small plate with a tin of beans on top will do the job.

In a large mixing bowl, beat the eggs, vegetable oil and sugar until well mixed and slightly fluffy. An electric whisk will make this easier, or use a food mixer. Sift in the flour, bicarbonate of soda and baking powder and beat well together. Finally, add the drained courgette and the lime juice and zest. Divide the mixture between the 12 muffin cases.

Bake for 20–25 minutes or until the muffins are golden brown and firm to the touch. Allow to cool completely on a wire rack before icing.

Make the icing by beating together the icing sugar with the lime juice and most of the zest until smooth. Drizzle the icing over the muffins, and decorate each with a little sprinkle of the remaining lime zest.
