3 tbsp olive oil

1 bay leaf

½ cup onion, chopped

2 tbsp garlic, chopped

½ cup celery, chopped

A sprig of oregano

½ cup of carrots, chopped

1 cup zucchini, chopped

1 cup white kidney beans, boiled

½ cup potatoes, diced

2½ cups tomatoes, chopped (without skin and seeds)

1 cup macaroni

2 sprigs of basil

Salt to taste

Pepper powder to taste

½ cup Parmesan or any hard cheese (optional)

1 litre vegetable stock or water

In a thick-bottomed pan, add olive oil and bay leaf. Now add chopped onions, oregano, garlic, and celery. Sauté for a minute and add carrots, zucchini, and potatoes. Sauté for 2 minutes on medium flame.

Now add the beans and tomatoes and cook for 3 minutes.

Add about 1 litre of vegetable stock and bring it to a boil. Add macaroni and keep it on simmer till it gets cooked.

Season with salt and pepper and add basil. Cook till the soup gets a little body. Transfer into serving dishes and garnish with shaved Parmesan cheese or any hard cheese.
