1 Heat the oil in a large (6 to 8 quart) pot with a lid over medium-high heat. Season the chicken with ½ teaspoon of the salt and the pepper. Place half the chicken in the pot and cook until lightly golden, 3 minutes per side. Transfer to a plate and repeat with the remaining chicken.
2 Lower the heat to medium, add the onion to the pot and cook, stirring, until translucent, 5 to 6 minutes. Add the ginger, garlic, curry powder, crushed red pepper flakes, and remaining 1 teaspoon salt and cook, stirring, until the spices are fragrant, 30 seconds to 1 minute.
3 Add the broth and coconut milk and stir to loosen any browned bits. Return the chicken to the pot, add the tomatoes with their juices and green beans and bring to a boil. Lower the heat to medium-low, cover, and simmer until the chicken is tender and cooked through, stirring once or twice, about 45 minutes. Serve garnished with the cilantro.
