Mixed Greens Salad

This versatile salad complements just about any meal—from soup ( Greek Lentil Soup and Pumpkin and White Bean Soup ) to falafel.

Makes 2 servings

3 cups mixed baby greens

1 tomato, halved and then cut into wedges

¼ small English cucumber, sliced

1 tablespoon balsamic vinegar or white wine vinegar

Pinch of salt

In a medium bowl, toss together the greens, tomato, and cucumber. Drizzle with the vinegar and toss again. Sprinkle with the salt and serve.
