Chickpea Salad Pinwheels

Prep time: 15 minutes / Serves 4

NO COOK NUT-FREE QUICK

1 (15-ounce) can chickpeas, drained and rinsed

⅓ cup finely chopped celery

¼ cup finely chopped radishes

½ teaspoon salt

½ teaspoon freshly ground black pepper

½ teaspoon garlic powder

¼ teaspoon paprika

3 tablespoons Vegan Mayo

3 tablespoons Dijon mustard

4 (8-inch) whole grain tortillas

2 cups torn fresh spinach

In a small bowl, mash the chickpeas with a fork until they are broken up well, but before they form a paste.

Add the celery, radishes, salt, pepper, garlic powder, and paprika and mix until combined. Add the vegan mayo and mustard, stir to combine, and set aside.

To assemble the wrap: Lay the tortillas on a clean work surface. Place ½ cup of the spinach in a vertical line down the center of one tortilla. Add ½ cup of the chickpea mixture over the spinach and spread it evenly. Repeat with the remaining tortillas.

4.

Roll the tortillas up tightly. Cut each tortilla crosswise into 1-inch pinwheels and serve.
