Baked Tomatoes with Basil and Tofutti Cheese

Ingredients:

3 large tomatoes, cut in half

¼ cup fresh herbs (parsley, basil and marjoram)

½ cup grated bread crumbs

½ cup Tofutti cheese

2 cloves garlic, minced

Pinch of salt

Pinch of pepper

3 tablespoons extra virgin olive oil

Directions:

Preheat the oven to 350 F. Put the tomatoes in a nonstick baking dish.

Combine the herbs (parsley, basil, and marjoram), bread crumb, Tofutti cheese, garlic, salt, pepper, and oil in a bowl. Mix well.

Sprinkle each of the tomatoes with an equal portion of the mixture. Bake for 30 minutes or until crusty. Serve.
