Stuffed Peppers

Ingredients:

1 large bell pepper, halved, deseeded

1 medium eggplant, rinsed, cubed

1 tomato, peeled, cubed

1 onion, chopped

1 carrot, grated

2 sprigs basil

1 garlic clove, crushed

Salt and pepper to taste

2 tbsp olive oil

Instructions:

Add half the onion to a preheated pan with olive oil. Season with salt and pepper.

Add eggplant and fry until golden.

In a stewpot sauté the remaining onion with carrots. Season with salt and pepper.

Add tomatoes and garlic to the carrots. Cook for 10 minutes, covered, over medium heat.

Fill the pepper halves with eggplant and onions.

Place the stuffed peppers into the stewpot. Stew for 15 minutes until the pepper is soft.
