Lentil Moussaka

Greek classic for inner strength

A great favorite of mine, even back in the days when I still ate meat. With its notes of aromatic and stimulating oregano, it is a fantastic warm meal for the summer. The lentils, eggplant/aubergine, and zucchini/courgette balance the solar plexus, while the potato stimulates. A good dish for supporting inner strength, self-esteem, and willpower.

SERVES 4–6

SPECIAL EQUIPMENT

ovenproof dish approximately 8½ in/22cm square and 2½ in/6cm deep

½ cup/100g brown lentils

¼ cup/50g green lentils

2 tablespoons grapeseed oil

1 onion, chopped

2 garlic cloves, chopped

2 tablespoons dried oregano

½ teaspoon ground cinnamon

2 x 14 oz/400g cans of chopped tomatoes

1 large potato, peeled and sliced

1 eggplant/aubergine, sliced lengthwise

1 zucchini/courgette, sliced lengthwise

BÉCHAMEL SAUCE

¼ cup/50g vegan spread

⅓ cup/50g brown rice flour

1½ tablespoons tapioca flour

1¾ cups/400ml unsweetened plant-based milk

1 teaspoon ground nutmeg

salt and freshly ground black pepper
