To store: Keep covered at room temperature for up to 2 days, cover and refrigerate for up to 4 days, or slice and freeze for up to a month.
To reheat: Reheat frozen slices in a preheated 350°F (177°C) oven for about 5 minutes, until warmed through, or for up to 10 minutes to toast them.
Tip: Freeze the remaining half can of pumpkin puree for a future batch of this bread, or use it to make pumpkin spice lattes ( here ).
Variation: PUMPKIN MUFFINS. Follow the recipe as written, but scoop the batter into 8 lined wells of a standard-sized muffin pan and bake for 30 minutes, until a knife inserted in the center of a muffin comes out clean. Let cool for 5 minutes before removing.
