1. At least 12 hours before pizza time, make the dough. Stir the flour, salt and yeast together in a large bowl. Stir in the water until it’s well incorporated. It should look sticky. Cover the bowl and leave it alone on the counter for at least 12 hours.
2. Preheat the oven to 450°F. Pour the tomatoes into a fine-mesh sieve set over a bowl. Crush them a bit, and let them drain while you roll out the dough.
3. Grease a large rimmed baking sheet, paying special attention to the corners. Generously sprinkle the counter with flour, then scrape the dough onto the counter. The dough will be wobbly. Sprinkle the top generously with flour. Pull and press the dough into roughly the shape of your pan. Transfer it to the pan and continue to press, squish and pull it into shape so that it fills the entire sheet.
4. Reserve or discard the tomato liquid, then transfer the drained tomatoes into the bowl. Add the salt and smash and crush them with your hands. Spread the sauce all over the dough. Top with mozzarella cheese, onion, asparagus and thyme (or whatever toppings you like).
5. Bake 15 to 20 minutes or until the mozzarella is bubbly and golden brown. Let stand 5 minutes before cutting and serving.
