harira (moroccan lamb soup)

This stew cum soup is traditionally eaten during Ramadan. The list of ingredients is fairly extensive, but it is well worth the effort. This makes for a delicious and hearty meal and is just mildly spiced so it can be enjoyed by young and old.

SERVES 4

500 g (1 lb 2 oz) lamb leg or shoulder meat, cut into bite-sized pieces

1 teaspoon ground turmeric

2 teaspoons paprika

2 teaspoons ground cinnamon

2 teaspoons ground ginger

1 brown onion, chopped

2 garlic cloves, chopped

2 tablespoons olive oil

2 celery stalks, chopped

1 small carrot, chopped

2 bay leaves

1 litre (35 fl oz/4 cups) chicken stock or water

400 g (14 oz) tin chopped tomatoes

400 g (14 oz) tin chickpeas, rinsed and drained

110 g (3¾ oz/½ cup) brown lentils, rinsed

1 handful flat-leaf (Italian) parsley leaves, chopped

1 handful coriander (cilantro) leaves, chopped

lemon wedges, to serve
