1. Add the capers, garlic, anchovies and vinegar to a food processor bowl and pulse. Then add the rest of the ingredients and pulse to the consistency of a paste rather than a purée.
2. You can either use immediately or keep in a covered bowl for up to a week in the fridge.
3. The salsa will keep for up to two months in the fridge if you do the following: spoon the salsa into a jar, tap the jar on a surface to remove any air bubbles and pour a layer of olive oil on top of the salsa to form a seal. Seal immediately. Stir before using.
