Notes Spaghetti and Meatballs

1/2 lbs each ground beef, ground pork and ground veal.

1 medium onion & 2 cloves garlic finely chopped

4 whole eggs

1/4 cup each bread crumbs & catsup Salt and pepper

1 lb spaghetti

2 quarts boiling salt water

2 cloves garlic chopped

1 medium onion chopped

2 24 oz cans chopped tomatoes

3 tbsp Italian seasoning

1/4 cup olive oil

2 tbsp melted butter

Salt and pepper

1/2 cup parmesan cheese

French bread

Meatballs. Take first 9 listed ingredients & mix thoroughly. Make 3 oz balls & place on sheet tray. Bake for 30 minutes in 350 ° oven. Remove from oven & set aside. Sauté onions & garlic in olive oil, add tomatoes,

1/2 tbsp spices. Bring to a boil, turn down heat, add meat balls & simmer for 45 minutes or until sauce starts to thicken . Stir frequently. Cook spaghetti in boiling salt water for 5-6 minutes until al dente. Strain & shock. Drain.

Cut French bread in 6 pieces, coat each piece with softened butter, sprinkle Italian herbs & parmesan cheese lightly on bread & bake at 350 °oven till bread is golden brown.

To plate. Put drained cooked pasta in a sauce pan & heat on low while slowly stirring in 1/4 cup sauce with handle of wooden spoon. Put pasta in serving bowl & top with sauce & meatballs. Garnish with rest of Italian spices & parmesan cheese. Serve with toasted French bread & side salad.
