Chicken Fricassee

A fricassee is a classic way of braising the chicken. This easy one-pot meal is sheer comfort food.

Cooking Time: 40 minutes

Servings: 8

Ingredients: • 3 tbsp. butter

• 2 tbsp. olive oil

• 6 chicken drumsticks

• Salt and pepper to taste

• 2 tbsp. minced shallots

• 1 cup sliced mushrooms

• 2 tbsp. white flour

• ¾ can chicken broth

• ¼ cup white wine

• Dash of thyme

• Dash of tarragon

• 1 bay leaf

• ¼ cup sour cream

Directions:

1. Season the chicken with salt and pepper.

2. Heat the butter in a large pan and sauté the chicken for 8 minutes, until browned.

3. Use a tong to transfer the chicken to a platter.

4. Add the shallots to the pan and sauté for 5 minutes.

5. Stir in the mushrooms and sauté for another 5 minutes.

6. Drizzle in the flour and stir for 2 minutes 7. Pour in the broth and wine and stir well.

8. Adjust the salt and pepper and season with thyme and tarragon.

9. Transfer the chicken to the pan and add the bay leaf.

10. Simmer the chicken for 30 minutes.

11. Turn off the heat and whisk in the sour cream.

12. Remove the bay leaf. 13. Serve over rice or noodles.
