Chapter 3: Main Course Spinach Mystery

1) Cheesy Spinach Chicken

This recipe is dedicated for cheese and chicken lovers. It includes a perfect combination of healthy ingredients to savor.

Prep Time: 50-60 min.

Serves: 2-3

Ingredients:

2 tbsp. chopped green olives

2 tbsp. olive oil

2 cups spinach leaves

2 tbsp. Panko crumbs

2 large chicken breasts, boneless

1 cup crumbled goat cheese

1 Tbsp. minced clove garlic

Directions:

- At first, preheat an oven to 350 degrees F.

- Grease a baking dish of medium size.

- Prepare the chicken by cutting it lengthwise.

- In a skillet of medium size, cook the garlic, olives and spinach for 4-5 minutes in olive oil.

- Add in the goat cheese and panko crumbs.

- Turn off the stovetop; stir a little to combine well.

- Then place the chicken breasts in a baking dish and top with the spinach mixture.

- Gently roll the chicken breasts.

- Bake for about 35 to 40 minutes to cook the chicken till turn tender and soft.
