Smoked Ham and Cheese Fatty

A fatty is spiced ground pork that you can stuff with different ingredients. Stuff, roll, smoke and enjoy a fatty.

Servings: 4

Time: 2 hours 50 minutes

Ingredients:

1 lb. ground pork

4 slices ham lunchmeat

½ c. onion, diced

½ c. pepper, diced

1/3 c. cream cheese

¼ c. barbecue sauce

1 tbsp. barbecue rub

1 tbsp. butter

Instructions:

1. Melt butter in a saucepan. Fry the onion and pepper. Let it cool.

2. Mix ground pork with barbecue rub, fried onion and pepper.

3. Spread mixture in a rectangle pan.

4. Put 2 slices of ham at the middle of the meat. Put cream cheese on the ham.

5. Use the remaining 2 slices of ham to wrap around the cream cheese.

6. Roll up the fatty to enclose the ham and cheese with the pork mixture.

7. Preheat smoker to 250 F.

8. Put the fatty on your smoker. Smoke for 2 ½ hours.

9. Glaze the fatty with barbecue sauce after 1 ½ hours on the smoker.
