For the steak

2 (1½-inch-thick) bone-in rib eye steaks, about 2⅔ pounds

Kosher salt, for dry-brining

2 tablespoons vegetable oil

2 tablespoons unsalted butter, plus more as needed

Freshly ground black pepper
