#2 Stuffed Bell Peppers

4 large green peppers

4 slices bread (diced)

6 oz cheddar cheese (grated)

2 oz mozzarella cheese (grated)

4 tsp oregano

Salt and pepper to taste

3 ½ cups tomato juice

Cut peppers in half length wise and par boil in boiling water for 2 to 3 minutes. Remove and drain. Combine remaining ingredients using only 1 cup of tomato juice and mix until bread is moist. Stuff mixture into peppers halves. Place in a baking dish and cover with remaining tomato juice, sprinkle with a little more oregano. Bake at 350° for 20 to 30 minutes. Note: Can make the day before, cover and put in refrigerator until ready to bake.
