Cheddar Pasta Bake

This dish makes a great warm pasta main dish for lunch or dinner. The cheddar flavor is wonderful. The lactose-free milk adds a creamy texture, and the bread-crumb topping finishes it off. Try adding canned chicken, turkey, tuna, or even crabmeat for variety. You can change the vegetables to your favorites, or use frozen. I prefer using fresh vegetables whenever possible.

Makes 12 servings

Preparation time: 45 minutes

1½ pounds pasta, your choice of shape

¾ cup safflower oil margarine, Hollywood

1 garlic clove, minced

½ cup all-purpose flour

6 cups 100% lactose-free 2% lowfat milk

1 tablespoon salt

1 teaspoon finely chopped fresh parsley

1 teaspoon dried oregano

8 ounces cheddar cheese alternative, TofuRella, shredded

1 pound zucchini, sliced ¼ inch thick

2 cups diced tomatoes

1½ cups frozen peas, thawed

1½ cups bread crumbs, Pioneer (or your choice of lactose-free crumbs)
