Set the Instant Pot to Sauté. When hot, add the oil and onion. Cook, stirring frequently, until the onion is soft and translucent, about 3 minutes. Add the garlic, pepper flakes, and salt. Sauté 1 minute more. Press Cancel.

Pour in the bone broth. Set the ham hock at the bottom of the pot. Add the greens to the pot, along with the vinegar. Secure the lid and set the steam release valve to Sealing. Press the Pressure Cook or Manual button and set the cook time to 60 minutes.

When the Instant Pot beeps, carefully switch the steam release valve to Venting to quick-release the pressure. When fully released, open the lid. Use tongs to remove the ham hock to a cutting board. Shred the meat off the bones with two forks. Mix the shredded meat back into the greens in the pot. Taste and adjust salt.

Serve the greens warm, topped with a generous ladle of pot liquor.
