Tomatoes, Sun-Dried

Although drying tomatoes leaves a higher concentration of carbohydrates, it also leaves the vegetable bursting with much higher concentrations of bone health goodness: Calcium, magnesium, niacin, and vitamin K feature among them.

Sun-dried tomatoes are a tasty snack and a fine addition to antipasto.

Vinegar

Raw organic apple cider vinegar contains mother of vinegar, which promotes mineral release. Do not buy pasteurized apple cider vinegar, even if it is organic. You can make your own from fresh apple cider, following the Apple Cider Vinegar recipe on page 244. We also recommend making your own bone vinegar (see the Bone-Building Calcium-Rich Vinegar recipe on page 231) because it is a self-contained bounty of minerals.

Other vinegars also promote mineral release though they are less powerful agents. Tasty vinegars such as balsamic vinegars and wine vinegars are made from grapes.
